The Hummingbird Cake has a Caribbean history and a love for its stand-alone flavor. I first tasted a slice of a Hummingbird Cake at a social and had to know “what kind of cake was that”. I then began to tweak it to even more of my liking over time. This cake that I have come up with now has much different ingredients, texture, look, and taste, but people all over, seem to love it. I decided to make the cakes as minis because it is indeed decadent, and it only takes a small amount to satisfy your love for something good. I am so proud of the fact that the new ingredients of whole grains, fruit, nuts, and seeds have a lot of wholesome plant-based benefits. You don’t have to feel guilty after consuming this cake, but instead know that you have fulfilled a part of your daily nutritional requirements while at the same time enjoying a great tasting cake. Hence, this cake makes a breakfast bar when you are in a rush or crunched for time. It can also be dressed up for a party scene. It is a great holiday gift or personal gift for a friend or family member. I used to only bake it around holiday times, and for special occasions, and I would always get the same response from people; “You should sell this cake”, “who made this cake?” “It is delicious!” and similar remarks. So, I decided that I would monetize it as a means of support, as I have chosen to go back to Medical Missionary work, and for the mere fact that people love it! Hummingbird Cake Mini-Gluten Free

This Gluten Free version of my Hummingbird cake will surprise you! It is nothing like the gluten free foods that you probably have tasted before because it has real food ingredients and not fillers to trick you into feeling full. I use a combination of Buckwheat flower and Almond meal flour; and surprisingly it transforms the cake into a resemblance and taste of a chocolate cake. Therefore, I decided to add a Carob glaze that brings outs that chocolate flavor. I avoid the use of real chocolate because of the stimulating and harmful effects that can be derived from the caffeine and other controversial ingredients in chocolate, such as Theobromines which have been documented in Scientific studies to over stimulate the Central nervous system. Carob, a bean pod that grows on a tree and the powder derived via processing is an excellent substitute that not only greatly satisfies the chocolate lover's craving for chocolate, but it brings so many health benefits; such as supporting the cardiovascular system, helps to regulate the blood sugar, it is used to rid gastric upset, it’s high in calcium and supports bone health, and is naturally sweet instead of bitter like chocolate can be which requires a high amount of sugar to mask that bitter flavor. I could go on and on about the benefits of carob, but I challenge you to do your research on carob and try it for yourself. Well, I said all this to say, my Gluten-Free Hummingbird Cake will be a great tasting plant-based option for that chocolate cake or brownie that will come with destructive ingredients.
